Loaded with Vitamins A & C, this soup will soon become a favorite!
INGREDIENTS
2 T olive oil
1 onion, chopped
1 T curry powder
1 large carrot, chopped
2 medium sweet potatoes, peeled and chopped
4 c low sodium vegetable broth
1 apple, peeled and chopped
½ tsp salt
1 tsp hot sauce, like sriracha
DIRECTIONS
Heat oil in a large pot. Add onion and sauté about 5 minutes, then add the curry powder, stirring for 1 minute. Add carrots, potatoes and broth. Bring to simmer and cover, cooking about 20 minutes until vegetables are tender. Add apple, salt and hot sauce, cooking 5 more minutes then turn off heat. Use an immersion blender to puree, or process in a blender, allowing steam to escape.
Tip: Enjoy hot.
